Version 0.38.2 I canceled a queued metal plate as it switched to being crafted.
System CPU AMD FX-6300 six core OS Windows 10 Home RAM 16 GB GPU AMD Radeon R7 370 GPU Driver 17.10.1731-170424a2-313676 E-WU-Template-1710 Sound Card Realtek
I tried and didn't get a crash. With a free slot I could cancel the queue and collect the ore - with full inventory I got a "inventory full can''t collect" message (and I think it didn't cancel the queue). But no crash, in several attempts.
