I've tried looking around the dashboard/game page and googled, but the only option I could find was to buy the game as a gift for someone.

But what if I want to give away a copy to a streamer/youtuber/friend to play my paid game. Is there such an option?

If you view your projects through the dashboard: https://itch.io/dashboard

And then click 'more' to the right of the game listing, you can find additional options to create keys that you can then distribute to people who can gain access to your paid game!
