When I have the app open on quest2, where on the screen can I find the version I am currently using?

Also, do you send an email to all purchasers when a new version comes out?

At the bottom of the left side panel, click on "User Guide". Then click on "About", and the version number should appear at the top. I don't email purchasers when a new update comes out, but I do announce it on Discord and post a development log note on the itch.io store page.
