I died inside the bottom house and the roof stayed off when I returned to that place in TOWN, I could see the inside of the house while outside. I went into the top house and then left and the roof returned.

Ahh, yes, that one seems clear enough.  Respawning while ROOF OFF doesn't reinstate it.
