I saw that in the journal, you can select the next level yet it seems to have no effect on the actual level itself, usually defaulting to the middle path. Is there something I'm missing or is there no way to select one?

It asks you to choose in the perk shrine.

Otherwise the selection is just for convenience so you dont have to hover
