Here my train of thought for the jam so far.

For me gas stations are either transactional - buying gas, or its me wandering around the aisles at 2am trying to get snacks when I get off work late.  I was thinking of making a liminal gas station area - where you enter a little gas station but its infinite aisles and drink fridges, but I couldnt get a good idea for gameplay.  I considered some sort of tycoon style game where you have a farm of dinosaurs to make more oil (Cause oil is just old carbon goo).  I considered the tried and true action roguelike - but felt like the gas station was too small to make a good level that seemed like a realistic gas station.  Maybe something with seagulls?  or a horror game? idk.

I think I have a pretty good idea blocked out now.  Don't want to give it all away but it's based around that feeling of browsing a gas station in the late hours - not really sure what you want - trying to find the right combination of items: snacks, drinks, gum, or random junk.

Kindof a deck builder or character builder? Where you choose items for your character from the gas station then do a bossrush

First I wanted to make a horror-game with the gas-station, but then I had another idea. Now it will be a happy and sunny game.

"that feeling of browsing a gas station in the late hours" I like this idea and where it could go visually. Really interested in seeing where you go with this.
