This is a very interesting idea - and a nice memory exercise!
As it is a game is a bit hard without some paper beside you, so maybe adding a 'note' system in it would be beneficial? For example a place where player can write what they already know about a certain recipe, so that they don't have to hold all of this information in their head. That way adding other tarts won't kill the player.
Though that does make for an easier gameplay. Perhaps restricting access to said notebook (making it possible to change written recipe only every couple orders or so, for example) will still leave some memorization up to player.
Though it was hard and required using brain (ugh!) it was a very unique and nice experience! Well done!
