Have you beaten the big jungle boss? If yes, you have a new portal spell at the bottom of your book. That will lead to the main quest.

Ok so this is what is supposed to happen.
Kill mantis, mantis becomes a small familiar moth in your sidebar.
Go back to portal, you'll meet a nymph there.
New code unlocks for the portal, it shows on a scrap of paper on the right side of the book on the portal code page.

there community voted on patreon for endgame difficulty as skulls like in Halo instead of a New Game+ type of end game. So currently there is nothing to do like you want, apart from tweaking your save file. It's in appdata

Try using different spells with a different damage type than what you’re using.
If I remember it’s immune to magic damage but physical damage will hurt it
