I like the vibe you have going on here, the game is simple to play as well.
I liked how the scenery changes per level.

I was confused about the hitbox, maybe this could be improved to be more intuitive. I would prefer having to choose the difficulty to have more fruits coming up, and maybe be less punishing to lose.
Perhaps more fruits that give different points to prioritize which ones to cut when the level becomes very fast, and you can't really cut all the fruits.

BTW, I have been following your posts, games and general activity on the Bootcamp's Discord channel. I learnt several thing from you. Your journey also inspired me to continue this bootcamp.

As for the game, I agree with all your points. Some of them became obvious to me during the playtesting sessions. Now that your opinion emphasize them, they need to be addressed.
As for your suggestion in the last line, it actually solves a game design problem that I couldn't find an effective solution to,
