Dang, wish more people were finding this one! The operation-style gameplay is really neat, despite how touch it could sometimes be (it feels slightly more like a skill issue than a development flaw). The organs and meatball artwork is cool, sound effects are nice, overall a great game! I also want to mention that the line "measure once cut twice" is a fantastic tagline.

Oh yeah, there were a few times that I had to squint my eyes just a bit at the redded-out object since it was so close! This type of game isn't too intensive, so you could probably get away with doing precise collisions (I don't know what engine you use, but I use gamemaker, which has those) to make it as fair as possible.
