Sorry for this unsolicited feedback, but maybe you want to take a look at Godot Engine.

I don't know about Unity and if there is any workaround to those issues with physics.
AFAIK Godot physics doesn't have any problem dealing with physics in low resolutions games.

Thank you!  I actually did consider Godot for this!  I installed it very recently and am still super new to it, but would like to get to a point where I'm using it for all my 2D game ideas!
