I’m not quite sure how to judge this class. The idea of a magical brewer is interesting, but maybe not one that fits my taste. I like the notion of being able to learn wizard spells from scrolls, but I would suggest if the story talks about studying the ability check should be intelligence. I think the merriment rules need a little more definition…at least copy and tweak the turn undead table you are using as a model. And if you roll a magic brew twice, do you get to use it twice as often, or reroll?

Thanks for the notes, I'll add some clarification when I do some layout tweaks. The stat is Charisma as that's the stat used to cast spells with this class. The Brewmaster being gregarious of spirit and being the life of the party after all. The thinking being it's more in line with the casters "prime" stat, but intelligence does also make sense, being the prime stat of the Wizard.
Yeah the merriment is a bit cheeky but it's assumed to be targeting your average bandit level ne'er do well who could use a good cheering up, using the priest Turn undead table. "Angry humanoid" being whatever you can convince your GM may fall into that category, Turn Undead seems to be house ruled a fair amount so this is one "spell" that introduces a bit of a judgement on behalf of a particular table. I erred on the side of not introducing too many non core mechanics to the class in an attempt to encourage use at the table.
As to the magic brew rolls, the mead in particular mentions that it is per point (In the talent) beyond that I assumed that the chance you are hitting this while being fairly common is not always going to be hit and thus a max level character will be less likely to have too many doubles of the special brews. It could also be interpreted to be once per day per talent point each, if one was so inclined. There is some room for the GM/Player to work that out, I can add a note about it
