Well, at least it sound like there will be a next game jam in your future, which I strongly encourage! I know I've had jams I didn't finish even after doing them for a couple years, so it happens to everyone. Best thing to do is try and learn from your mistakes and maybe look up good rules of thumb on the internet for game jams and game development/design in general. To me it sounds like you had a lot of ideas you wanted to do and that caused you not to finish. So, my advice would be to scale back the game to something very basic, at least till you get some more practive under your belt. In time you'll be able to do more in a short amount of time and you'll also know how much you can cram in.
Looks like your using the Godot Engine, which is a great choice. If you're using version 3.1 then might I suggest you use my project starter? It's a Godot 3.1 project with some pre-built scenes that I found myself constantly re-creating each game jam/project.
