This message about TapMinigameInputs is not related to the visuals, it's a missing reference on a VR input. I've silenced it in the upcoming 1.7 to avoid confusions.

Can you try setting the game to "potato" quality, and maybe reducing the resolution at well?

How much RAM does your M1 have?

Also, are you 100% sure it worked in 1.68?

changing the resolution and quality doesn't have any effect.

My MacBook has 8GB RAM, and I'm sure it worked in 1.68 :)

Didn't you change the Unity-Version in 1.69? Maybe that's my problem. 

I will play it on a Windows Laptop from now on, so there is no need for you to change anything.

I have other MacOS users with the same issue as you,  but you are the only one providing me an actual exchange to help with the problem ^_^

Do you mind testing the latest version? It's still 1.69f7 but I reverted another library that was updated in 1.69. I've good hopes for this change.

I'm sorry but the new version has still the old problem, no effect with changing resolution or quality.
