If you've been enjoying the game so far, nothing about that experience is going to change though...? There are already choices you've had to make that impact character stories.

Personal preference. Linear mode covers the full story and just cuts out bonus repeatable scenes (be it repeatable sex scenes or just small bits of dialogue) that are used to raise your stats with a character in sandbox mode. You can switch between both modes at any time from the settings menu, so if you're not sure, you can start out in sandbox so you don't miss out on anything and switch to linear if you're not liking that (you can always switch back to sandbox to check out any of those repeatable scenes).
That said, linear mode seems to be the most popular of the two among the people I've talked to on the Discord server.
Thank you! I'm not looking to add any languages other than English in the official releases, unfortunately. As much as I would love to support as many languages as possible, as it currently stands this would only serve to slow down development significantly, even with outside help. Anyone is free to create a community translation though (Ren'Py should make this fairly easy to do, I've seen a few MTL ones around already)!
If you're on PC/Linux/Mac you should be able to just continue from a previous save (even if you deleted the game, saves are stored in a different folder). If you're on Android you can also just continue from a previous save unless you uninstalled the game, as that will take any saves files along with it.
If you're absolutely certain you've completed all the prerequisite events, could you send me your save file so I can take a look at it and figure out what's wrong? You can find it in "Lost in You/game/saves" (if you have Discord, joining the Discord server would make things easier but feel free to just send the file here if you want).
Something you could try is changing the game to linear mode (under "Gameplay" in the settings menu) and then skipping to the next time slot, that should automatically trigger whatever event is up next (you can change it back right after that).
I'm personally not the biggest fan of Python (largely because I generally dislike whitespace sensitive languages), but Ren'Py itself has been pretty nice to work with. It has its issues, which I sometimes have to work around, but all in all a great engine purpose-built for visual novels.
As for the horror tag... Unfortunately itch.io only allows up to 10 different tags, so I'm trying to optimise for tags that drive numbers (whilst obviously still being applicable to the game). If I recall correctly, I originally did have it, but it didn't pull the numbers the other tags did so swapped it out for a better performing one. I'd love to add it if this restriction wasn't a thing, but alas.
