You might be surprised what can be done in browser. I sure was. Looking at your gameplay demo, I don't see anything that would necessarily prevent you from running it in browser. Aside from the technique you used for water, as you mentioned. It might not look as a pretty, and performance isn't going to be 1:1, but I think it could be done with some time and effort. I had to remove all my shaders from my game to get it to run in browser, for example, among other things. That is where the phrase 'Kill your darlings' comes into play. Granted, I work in godot and have no idea how unity works, so I could be completely wrong here, but I think it's worth a shot to try, even if for nothing but the learning experience.
I also fell into the waterlogged exe boat. It is really demotivating to have 780 downloadable games more or less thrown away because of 20 bad actors. I can't update my game on itch until the jam is officially over, but I have since figured out how to make my game run in browser. I was going to just say 'forget it' and move on to a new project, but leftoverproductions did actually play my game a few days ago, and he even recorded the gameplay! That revealed a ton of bugs that I wouldn't have seen otherwise, and made me more determined to keep working on it. (they also submitted to the jam here fyi) All in all, it really sucks that it has to be like this, but going forward I simply cannot make windows only games in the context of a jam, which is only meant to be a prototype anyway. The tradeoff between accessibility/safety, and high tech solutions is too important to ignore. I think a browser only rule to future jams might actually be a hidden boon for new devs, as it removes that temptation to put the cart before the horse in the context of taking advantage of new high tech features vs. making a clever design.
It seems the store wasn't working! The first level is by far the hardest to run, and you really can't progress if the store wasn't working :( Your reactions are meant to be pretty bunk until you get a few upgrades.
I was under the impression it was far more CPU limited, but I did most of my development on an i9-12900K with a 3090 so my perception is likely to be skewed.
Some notes:
'Energy' is purely a measure of 'score' and used as currency which you would spend in the store (if it worked!).
There is 'radiation' feature where the game randomly gives you the value of a single fission, I noticed you 'waiting for energy to reach 1000' and I had a chuckle LOL
Once again, thank you so much for playing and recording your gameplay, this is beyond helpful for me.
I wish I would have started with idea of creating a game that runs in the browser. My game only runs on windows, and I'm pretty sure nobody has played it because of that. I've had Oppenheimer stuck on my brain so I made a fission simulator at the atomic scale. PERSONALLY I think it's really cool to see in action, and I had an amazing time geeking out on the science of it all during the development process. 🤓

I had plenty of reservations once I saw the judge list. You kinda hit the nail on the head with the idea that this is how it will feel when ANY streamer plays your game. A big streamer playing your game can be a huge boon, but most of the time you will be disappointed. Go watch vinesauce on any given sunday to see tons of examples.
