Thanks for your feedback. I hope you'll be glad to hear that I've got plans to integrate some reactive tutorials already, but they're just not ready yet. I will take a look at the other issues you noticed and get those ironed out as well. :)
As for getting stuck on the edible food tutorial. Know that you can abort quests / skip tutorial quests in the quest manager, but I'll take a look at what might have caused you to get stuck the way you did.
Some plant life isn't edible / interactable such as the rushes. The small seaweeds are also non-interactable, but I must have mistakenly flagged them as edible without a food attribute, which I'll correct (Thanks for that report).

I'm sorry to hear you're having issues with lag. Have you tried reducing your video settings? Lowering the Grass Density, Draw Distance, Shadows, and Water Quality settings can all have major impact on performance.
Additionally, Adapt is not optimized for on-board GPUs. So you will likely see graphics latency if you're using a laptop with and Intel onboard or other similar GPU.

Thanks for your feedback. I'm working on some fixes now for a few controls that can get stuck as you mentioned.
As for lag, make sure to check your graphics settings if you're on a laptop / non-gaming machine. Shadows, draw distance, grass, and water quality can all be a bit much for less fancy graphics cards.
Yes, both flight and Aquatic eggs / vivipary are planned
