I'm in the process of making something using Decker, but I was wondering... is there a limit to how many cards can be in one game? I couldn't find anything concrete in the docs, but maybe I missed it?

There's no hardcoded limit. Several dozen cards is no problem, several hundred is probably fine too, and a few thousand might be pushing it but could be OK.
The size of a deck on disk will have some impact on the performance of saving and loading, as well as RAM usage, but that depends on a lot of factors, like how complex backgrounds are and how much other content you place on the cards.
