Second, game jams have time limit so you'd need to be able to compose music tracks in limited time.

yea that's not a problem. I'm wanting to do more of the sound design though and I've noticed that people are using different programs to develop their games. Does that mean I need different Middleware to work with them? I'm figuring things out.

That I don't know.

However, I noticed some engines use common audio files such as .wav and .ogg for their games. So to be safe, export your music and sound work to either of those files.
