Thanks for the reply and update. I was able to change the resolution after the 16.9 update. However, whether the resolution is at 720p or 2160p, there is no change in the visual quality. It appears just as pixelated as before. The only thing that changes is the aspect ratio in windowed mode. Are the game assets themselves low res? 

Could you send us a screenshot of how things are looking like on your side?

Because we do have some rocks here and there that are low-res. Remember that there's also that slider to set the screen resolution that might help with the problem

As you can see, everything looks extremely pixelated. Changing the resolution does nothing except change the size/aspect ratio of the window. I have all the latest GPU drivers installed. I can see in your latest youtube uploads that the game is running at a much higher resolution on your end.

This is very odd indeed... Hmm.. We unfortunately don't know how to fix this because seems like a problem in unreal engine. It appears that unreal 4.27 will be released soon and the best we can do for now is wait and hope that once we update the engine it will be solved.

Is there anything that I can at least try? I tried deleting the game completely and reinstalling, however when I launched it again, it still had my save file. Is there any folder outside of the main folder that I need to delete? For example, a lot of games save information in Documents. 

hmm Maybe you can try to "Press Windows+R" and in the Run box put in %localappdata%\Kalyskah_RPG. Then delete the Config folder. if I'm not mistaken, the files that store the resolution can be found there and if you delete them you might be able to get back to default settings. You can also try to manually set your resolution scale to something higher on the "GameUserSettings" file on that folder.

I changed the resolution manually to 2160, however when I start the game it is still not displaying correctly and the config file reverts to 960 (see attached jpeg above)

I figured it out. Not sure what the problem was, whether it was something on your end or my display settings, but disabling fullscreen optimizations in compatibility mode fixed it.
