This is incredible! I agree with the comments below about using a different key to accelerate, but I don’t want to take anything away from what you’ve achieved. Absolutely bloody well done!
A small, simple, but solid little wroom-wroom. :)
I like how camera zoom depends on the velocity. I would make it "inert", so that it does not zoom in so abruptly (i.e. instantly) when you suddenly slow down due to hitting another car, something like:
in each frame (assuming consistent framerate), where "drag" would be a positive constant between 0 and 1 (perhaps closer to 1, for a more noticeable effect, e.g. something like 0.8) and targetZoom would be the calculated velocity-dependent zoom.
Other thing I would add is an additional key for throttle (AFAIK, PICO-8 supports two additional game inputs besides the direction input). As already pointed out in a previous comment, it would be better for playing with a gamepad (which I initially intended because it is more relaxing, but quickly decided against it, noticing the difficulty with confusing controls).
Now, I wrote a lot about these two things, but they are really minor issues (it is me who sometimes knows not how to put some thoughts in not too much words) and overall this is a great work, congratulations! :)

Adding lerp to camera zoom is a good idea, this will definitely be included in the post-compo version.
It looks like you have the basis to make a good little arcade racing game, what a job...
I like this a lot, it could really be nice if you finish it after the jam. It needs timekeeping, obviously, and a high score list would be cool. Another thing to consider: Could you use Z for gas in addition to Up? Up is a little awkward when playing with a gamepad.

Really surprised to see a racing entry for PICO-8 in this low resolution. I thought it wouldn’t work but the dynamic zoom level really helped with that.
Gameplay wise a new track, or a tune-able AI difficulty would be really nice addition for some replay-ability.
Also not sure if known, but you can start immediately instead of having to wait for the countdown sounds.
Quick question? How did you handle enemy AI? Are they following a pre-drawn line for the track?

Some game genres like racing where you need to see ahead just shouldn't adapt to a 64x64px canvas and yet you did a fantastic job at it. The camera zoom works perfectly, doesn't get in the way of giving the impression of speed, and just feels great. The music, while simple, reminded me a bit of the Lotus 3 music on Amiga. I never got lost on the track, the controls were quite smooth and the car felt great. The collisions with other cars were a bit funky in the way that there was some unpredictability in how you would end up. I would have loved to see more tracks, and maybe a more difficult AI as well. Some really great potential in this game, awesome job!
There's potential in this but it would benefit alot from a bit additional content like additional race tracks. Right now it is very short and there is very little replayability. Add additional tracks and a simple tournament mode and this could be real fun for some time :)
I do like the presentation, especially because you get a certain sense of speed while still keeping an overview.
I would like some indication on what buttons to use, as I instinctively wanted to press start using space or enter and it ended up being x, which I wouldn't have guessed in ages.
Also, AI starts the race early, that's kind of unfair :P
Please keep working on this and flesh it out more, I like where you are going :)
